


Paolo Cassini, Extra Virgin Olive Oil, S'ciappau, 500ml
S’ciappau Extra Virgin Olive Oil is a light fruity oil that expresses, with balance and elegance, the full character of the Taggiasca variety. Distinct notes of artichoke and almond can be recognized, while gentle hints of bitterness and spiciness unfold with subtle intensity.
It is produced from the olive groves of the Rossetto, Maorengo, and Crosa estates, in Isolabona, in the western part of Liguria, in the province of Imperia— the native land of the Taggiasca olive.
Paolo Cassini’s is a small family-run business: ten hectares and 2,000 olive trees, exclusively of the Taggiasca variety, most of them centuries old. The oldest were planted by Benedictine monks around the 13th century.
Production is limited but of exceptionally high quality, as demonstrated by the numerous awards and recognitions received over the past twenty-five years.
